TOP FIVE AUTUMN INGREDIENTS - ARTICLE


Heading into a new season means an abundance of fresh food to incorporate into dishes. Get creative in the kitchen with these top 5 autumn ingredients, that will no doubt impress your guests.

The Langham Hotel in Sydney has re-opened following its lavish $30 million refurbishment and head chef Daniel Rudolph has just finished creating his autumn menu for the chic European inspired Kent Street Kitchen. The New Zealander took some time out with Victoria Murphy to share the top 5 ingredients we all should be making the most of this autumn.

1. Smoked Salmon

This is a brilliant autumn option. Smokey flavours take the food away from the freshness of summer and push it toward winter. Serve the salmon at room temperature and try to incorporate a hint of apple somewhere in the dish – it’s a match made in heaven.

2. Mushrooms

These are at their best in autumn and you’ll find an array of freshly picked varieties available, so try to use them wherever possible. They are perfect to incorporate in ravioli dishes.

3. Raw Vegetables

Raw vegetables are a great way of bridging the summer/winter gap. They can add texture and depth to any warm dish… just make sure they are sliced extremely thin.

4. Octopus

Especially great this time of year, and goes so well with a piece of snapper. Add some crisp baby corn spears for texture and you’ll have a show stopping dish.

5. Carrots

Carrots are in season and absolutely beautiful at present. Aside from entrée and main dishes, carrots are fabulous in desserts and you cannot go past a good carrot cake to impress your guests. Try serving it cut up with some ice cream, white chocolate and garnish with carrot leaves and flowers.
